Description
This is a beautiful, elegant washed lot that was fermented overnight and sent to dry in a greenhouse on raised beds. The profile is bright and almost Kenya-like in its character. Creamy mouthfeel, with hibiscus and dried mango notes.
SOURCING STORY
This is our second time buying from Ka‘ū Sunshine Farm, located in Wood Valley, Ka‘ū. Sunshine Farm is among the highest elevation farms in the Ka‘ū district as well as the island. Nestled in the heart of Wood Valley, a former sugar cane producing area with deep soils and plenty of rain. The nights there are cold and harvest season is much later than most other farms in Hawaii. Typically starting in December or January at earliest and not reaching its peak until March-May. The farm spans 20 acres, mostly planted with Red Catuai, Typica, Maragogype, and a few yellow Bourbon trees scattered amongst the field.
